Ever since Bayfield Berry Farm started their business in 2001, they’ve been dedicated to unlocking the seemingly infinite possibilities contained within a single berry or humble piece of fruit. The farm produces mountains of berries every year, and every year, owner Marlene Beyerlein and her family invite people from all over to come and pick their own berries. They’ll also do the picking for you, if you’re not into DIY berry collecting.
Beyond simply eating berries, there are jams to be made, juices to drink, and desserts to sample. In 2017, they elevated their explorations by adding an on-site processing facility to the farm, turning it into a fruit to finish operation.
Some of their recent forays into the world of fruit wine have been utilized some unusual and under-rated fruits, and it’s been yielding some tasty results, making a strong case for the idea that wine isn’t exclusively the domain of grapes. After centuries of popularity, fruit wines have fallen out of fashion over the past few decades, and Bayfield Berry Farm is betting that their time has come again.
Some of the fruits they’re using are familiar ones, like blueberries and blackberries. These sweet berries make for perfect dessert wines that are also a great secret ingredient in sauces or marinades.
Less common choices like Saskatoon berries, currants, and gooseberries make for a less common wine. Using sour cherries results in sour cherry wine, but its the good kind of sour. Playing around with anti-oxidant rich Aronia berries led to a uniquely dry wine that made for a great digestif. Fruit wine also comes in a wide range of lovely and unusual colours, from orange to purple. Whatever your preferred flavour profiles, Bayfield Berry Farm probably has a fruit wine that’s right for you. And once you start combining all these interesting berries, the options are practically limitless, which means the experiment can carry on indefinitely.
